Bacon is a cured meat prepared from a pig. It is first cured in a brine or in a dry packing, both containing large amounts of salt; the result is fresh bacon. Fresh bacon may then be further dried for weeks or months, boiled, or smoked. Fresh and dried bacon must be cooked before eating. Boiled and smoked bacon are ready to eat, but may be cooked further before eating.

  • Bacon Salad Dressing
    Cut the bacon in to pea size cubes or chop it. Put the cubes in a hot roasting pan and fry them for about 2 to 3 minutes. Combine fry bacon and all other ingredients in a bowl and mix them together.   • Bacon Wrapped Stuffed Dates
    1.  Poke a bit of goat cheese inside each date. 2.  Use about 1/3-1/2 of a strip of bacon to fully wrap each date. 3.  Bake on a parchment paper lined cookie sheet at 350 degrees for 10-15 minutes or until bacon has cooked. 4.  Allow to cool for 5-10 minutes and stick a toothpick inside each date before serving.
  • Candied Bacon
    Peheat the oven to 375 degrees.Line a baking sheet with parchment paper.Lay the bacon out on the parchment and bake for 10 minutes, the bacon should be partially cooked, but not yet crisp.Take the bacon out of the oven and coat one side of the bacon with the sugar-pepper mixture and return to the oven for about 5 more minutes.The sugar should be caramelized and the bacon should be crisp.  When the bacon is cool enought to handle, carefully lit onto a cooling rack, serve warm or at room temperature.  This holds well for a couple of hours.
  • Roast Chicken with Bacon
    Place a slice of lemon on the chicken.Wrap a slice of streaky bacon slightly tight starting from the joint part with the fatty part of the bacon should be 'outside'.Overlap the bacon a little so you don't see the chicken.Place the chicken in a oven proof dish with the loose end bacon placed down.Scatter the garlic around.Roast the chicken in a preheated oven at 220C for 15 minutes.Reduce the temperature to 170C and continuing roasting for another 40 minutes or till thoroughly cooked.Serve.
