A doughnut or donut is a type of fried dough food popular in many countries and prepared in various forms as a sweet snack that can be homemade or purchased in bakeries, supermarkets, food stalls, and franchised specialty outlets. They are usually sweet, deep-fried from a flour dough, and shaped in rings or flattened spheres that sometimes contain fillings. Other types of dough such as potato can also be used as well as other batters, and various toppings and flavorings are used for different types.

  • Apple Cider Doughnuts
    Boil the apple cider until it reduces to about a quarter cup in size and allow to cool. In a large bowl, beat the sugar with the butter until smooth, add the eggs, buttermilk and reduced apple cider. In another bowl, mix together the remaining dry ingredients: flour, baking powder, baking soda, cinnamon, salt and nutmeg.Add the flour mixture slowly to the liquid mixture, and mix just to combine. You want the dough not to be sticky. Add flour to counter and knead slightly just to combine without overworking the dough. Roll or pat the dough to a 1/2 inch thickness. You can either use two circular cookie cutters (one larger than the other) to create doughnut circles or roll into small balls for holes. Place a few at a time into a deep pan (I used my dutch oven) that’s been filled and heated with enough oil, approximately three inches deep. Fry a few doughnuts at a time, turning once or twice until they are browned and fully cooked through. Allow the hot doughnuts to drain on some paper towel. While the doughnuts are still warm, coat them in the cinnamon-sugar mixture. You have to work pretty fast if you want the cinnamon-sugar mix to stick, we had some difficulty with this.
  • Mini Angel Baked Donuts
    Preheat oven to 175°C. Lightly grease a donut cups, set aside.Beat egg whites with the salt and the cream of tartar until the soft peaks form. Add the sugar, a tablespoon at a time. Don't stop to beat. Continue to beat until stiff. Sift the flour with the corn starch and the vanilla extract upon the egg whites mixture. Gently combine the ingredients mixing with a wooden spoon. Fill the donut cups. Sprinkle with chocolate chips. Bake about 10 - 15 minutes. Cool completely before serving.

    1. In a big bowl, combine (A). 2. Push the flour to the side and in the center, add in (B). Mix (B) well with a spatula and mix the flour in to just combine. Set aside.3. Spray the donut pan with nonstick cooking spray and divide the sweeten coconut flakes and chocolate chips at the bottom of each of the donut tube pans. Divide batter among pans. Place the batter only half full so that you will see donut hole when baked. 3/4 full will not be able to see any donut hole when baked.4. Bake at 400°F for 10 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire rack.

    Boil sweet potatoes until soft than put in a pinch of salt and mash the potatoes. Put in plain flour bit by bit, add in sugar and kneads ingredients until mix well. Scoop 2 tablespoon and roll on your palm to make a small ball. Shape it round and dig a hole in the middle like donut. Heat deep frying oil and fry until turn light brown. Drain and put a side. FOR COATING: 1) Heat frying pan without oil, add in water then sugar. 2) Cook until sugar dissolved and transform to white colour. 3) Deep in all the sweet potatoes donut at one go and coat it well until all covered with white sugar. 4) Wait till cold then serve. Note: if your fingers sticky while shaping out sweet potatoes donut, you can sprinkler your palm with flour to avoid stickiness.
