The energy is the food, and we have choices as to what we feed ourselves. Americans have become more educated about food choices in the last five years, and certainly in the last ten. The Food Network made celebrities out of chefs. They made cooking look like something that was more than just a chore. It made shopping at farmers' markets to look glamorous, and turned "homemade" into an artisanal word.
