A steak is a cut of meat. Most steaks are cut perpendicular to the muscle fibres, improving the perceived tenderness of the meat. In North America, steaks are typically served grilled, though they are also often pan-fried. The more tender cuts from the loin and rib are cooked quickly, using dry heat, and served whole. Less tender cuts from the chuck or round are cooked with moist heat or are mechanically tenderized.

  • Moroccan steak sandwich
    This recipe was inspired from the brochettes I had in Morocco.  Shake some cumin, paprika, cayenne pepper and garlic salt on both sides of the steak.  Grill until medium rare.  Slice the cherry tomatoes and olives.  Add to the bun.  Eat.
  • Steak Salad
    Rub the steak with a nice coat of olive oil and cover with salt and pepper, grill to perfection, let rest for 10 mins, slice. Top greens with slice tomatoes, cheese, steak and dressing. 
  • steak with mushroom sauce
    Make 2-3 cuts in steak and insert chopped garlic. Spread mustard on one side of steak.Place steak in frying pan, mustard side down. Sprinkle some salt and pepper. Cook a few minutes on both sides. Take out steak and place on plate.In the frying pan (with the steak juices), toss in onions and mushroom. Add some soya sauce and oyster sauce. Stir in diluted cornstarch to thicken sauce.Pour sauce over steak. Add some cilantro garnish if desired.
  • Steak Tartare
    Traditionally, steak tartare is loaded with things like capers, onions, whole eggs, anchovies and mustard. Being a minimalist here is my pared down version. My favorite way to enjoy this raw delicacy is atop slices of toasted flatbread.Trim beef of any excess fat.Finely mince the beef and place in a bowl.Add egg yolk, oil and salt. Mix gently then serve.
